Ingredients
- 3 pounds yellow squash chopped
- 2 - onions chopped
- 2 - carrots chopped
- 2 cans cream of chicken soup
- 1 cup sour cream
- 2 tablespoons pimento
- 1/2 cup butter, melted
- 1 package small pkg herb stuffing mix (not cubes)
How To Make alan's squash casserole

Step 1Cook squash, onions, carrots in boiling water until tender. Drain.

Step 2Add remaining ingredients except butter and stuffing mix.

Step 3Combine butter and stuffing mix. Place half in bottom of a greased 2 quart casserole. Top with squash mixture. Top with remaining buttered stuffing.

Step 4Bake 375 degrees for 45 minutes.
