Great company casserole. Can be made the day before and reheated to serve.

  • 3 lb
    yellow squash chopped
  • 2
    onions chopped
  • 2
    carrots chopped
  • 2 can(s)
    cream of chicken soup
  • 1 c
    sour cream
  • 2 Tbsp
  • 1/2 c
    butter, melted
  • 1 pkg
    small pkg herb stuffing mix (not cubes)

How to Make Alan's Squash Casserole


  1. Cook squash, onions, carrots in boiling water until tender. Drain.
  2. Add remaining ingredients except butter and stuffing mix.
  3. Combine butter and stuffing mix. Place half in bottom of a greased 2 quart casserole. Top with squash mixture. Top with remaining buttered stuffing.
  4. Bake 375 degrees for 45 minutes.
