My family loves this squash. For diabetics you can use Splenda brown sugar.

Ingredients For acorn squash

    acorn squash
  • 2 Tbsp
    butter, melted
  • 4 Tbsp
    brown sugar, divided
  • 2 tsp
    cinnamon, divided

How To Make acorn squash

    Preheat oven to 350 degrees.

    Cut squash in half and clean out the seeds.
  • 3
    Cut each half in half so that squash is quartered.

    Place the squash pieces skin side down on a large baking pan.

    Brush each piece generously with the butter.
  • 6
    Sprinkle each evenly with the brown sugar. One Tbsp on each piece.

    Sprinkle each with the cinnamon. 1 tsp on each.

    Cover with foil.

    Bake for 20 minutes or until tender.

    Serve immediately.
