Ingredients

  • 1-1/2 c
    vinegar
  • 1-1/2 c
    sugar
  • 1/2 tsp
    mustard seed
  • 1/2 tsp
    celery seed
  • 1/2 tsp
    turmeric
  • 6 c
    sliced zucchini
  • 2 c
    thinly sliced onion
  • dash(es)
    salt

How to Make 24 Hour Zucchini Pickles

Step-by-Step

  1. In large stainless kettle, combine vinegar, sugar and spices. Heat until sugar has dissolved and mixture comes to a boil.
  2. Turn off heat and add zucchini, onions and salt. Put in jars or plastic containers and refrigerate up to a month.
