I made up this recipe. I was trying to figure out what I was going to do with zucchini and this idea came into my mind. I served it with my Portuguese Pinto Beans. I think it turned out real yummie. So I am posting it to you.

  • 3 large
  • 1 medium
    zucchini, sliced
  • 2 medium
    green onions, sliced
  • 2 Tbsp
  • 2 tsp
  • 1 tsp
  • 1 tsp
    garlic powder
  • 1/2 c
    parmesan grated cheese

How to Make Zucchini Bake


  1. Beat 3 eggs. Add flour and mix well. Add garlic powder,onions,salt and pepper. Add sliced zucchini. Put in a baking dish sprayed with cooking spray. Top with the parmesan.
  2. Bake in 350 oven for 35 minutes.
