I made up this recipe. I was trying to figure out what I was going to do with zucchini and this idea came into my mind. I served it with my Portuguese Pinto Beans. I think it turned out real yummie. So I am posting it to you.

Ingredients For zucchini bake

eggs
1 md

zucchini, sliced
2 md

green onions, sliced
2 Tbsp

flour
2 tsp

salt
1 tsp

pepper
1 tsp

garlic powder
1/2 c

parmesan grated cheese

How To Make zucchini bake

Beat 3 eggs. Add flour and mix well. Add garlic powder,onions,salt and pepper. Add sliced zucchini. Put in a baking dish sprayed with cooking spray. Top with the parmesan.

Bake in 350 oven for 35 minutes.
