This recipe can be made the day before and cooked before serving. Very popular and easy dish for potlucks.
I use ritz crackers but soda crackers work well to.

Ingredients

  • 1 bag(s)
    frozen mixed vegetables
  • 1 c
    cheese, shredded
  • 1/2 c
    mayonnaise
  • 1/4 c
    onion diced
  • 1/2 c
    celery diced
  • 3/4 c
    butter, melted
  • 1/4 c
    butter, melted
  • 1 c
    ritz crackers crushed

How to Make Vegetable Casserole

Step-by-Step

  1. Preheat oven to 350.
    Grease 9x13 baking dish.
  2. Combine vegetables, cheese, mayo, onion and celery. Pour into baking dish and top with the 3/4 cup melted butter.
  3. Mix remaining 1/4 cup butter with cracker crumbs. Sprinkle on top.
  4. Bake for 35 mins.
