Ingredients
- 1/2 cup margarine or butter
- 3/4 cup green pepper, chopped
- 1/3 cup onion, chopped
- 1 can 7oz cream style corn
- 1 can 7oz whole kernel corn, not drained
- 3 - eggs, well beaten
- 1 package 8.5 oz corn muffin mix
- 1 cup cheddar cheese, shredded (4oz)
How To Make two corn casserole

Step 1Preheat oven to 350.

Step 2In small skillet, melt margarine. Add green pepper and onion. Saute until crisp and tender

Step 3In large bowl, combine the two corns, eggs, and muffin mix. Blend well.

Step 4Add onion/pepper mixture .. and mix well. Pour into 2 quart casserole dish. Sprinkle with cheddar cheese.

Step 5Bake until firm or set (about 55-65 minutes) Let stand 5 minutes before serving.
