Ingredients

  • 1/2 c
    margarine or butter
  • 3/4 c
    green pepper, chopped
  • 1/3 c
    onion, chopped
  • 1 can(s)
    7oz cream style corn
  • 1 can(s)
    7oz whole kernel corn, not drained
  • 3
    eggs, well beaten
  • 1 pkg
    8.5 oz corn muffin mix
  • 1 c
    cheddar cheese, shredded (4oz)

How to Make TWO CORN CASSEROLE

Step-by-Step

  1. Preheat oven to 350.
  2. In small skillet, melt margarine.
    Add green pepper and onion.
    Saute until crisp and tender
  3. In large bowl, combine the two corns, eggs, and muffin mix. Blend well.
  4. Add onion/pepper mixture .. and mix well.
    Pour into 2 quart casserole dish.
    Sprinkle with cheddar cheese.
  5. Bake until firm or set (about 55-65 minutes)
    Let stand 5 minutes before serving.
