1/2 cmargarine or butter
3/4 cgreen pepper, chopped
1/3 conion, chopped
1 can(s)7oz cream style corn
1 can(s)7oz whole kernel corn, not drained
3eggs, well beaten
1 pkg8.5 oz corn muffin mix
1 ccheddar cheese, shredded (4oz)
How to Make TWO CORN CASSEROLE
- Preheat oven to 350.
- In small skillet, melt margarine.
Add green pepper and onion.
Saute until crisp and tender
- In large bowl, combine the two corns, eggs, and muffin mix. Blend well.
- Add onion/pepper mixture .. and mix well.
Pour into 2 quart casserole dish.
Sprinkle with cheddar cheese.
- Bake until firm or set (about 55-65 minutes)
Let stand 5 minutes before serving.
