tasty onion, pepper, potato & egg hash
I love eggs and had two peppers left over from another recipe. So I thought I would cook some eggs with them and this recipe is what I finally came up with. The family just loved it and now request it all the time.

Ingredients
- 1 - green bell pepper
- 1 - red bell pepper
- 1 - medium onion, diced
- 1 - 14.5 can diced new potatoes
- 1/2 teaspoon garlic powder
- 3/4 teaspoon onion powder, or to taste
- 1/4 cup cooking oil, i use avocado oil
- 3/4 cup to 1 cup shredded mild cheddar cheese
- - salt and pepper to taste
- 12 - eggs
- - sour cream for serving if you like

Step 1Dice peppers and onions, noting what amount might be to your taste.

Step 2Heat oil and saute peppers, potatoes, and onions, adding the garlic and onion powders.

Step 3Beat one dozen eggs with salt and pepper to taste, and pour over fully cooked veggies. Cook the eggs thoroughly, attempting to make into round portions. Spread cheese over hot hash and serve.
