succulent roasted acorn squash

This is one delicious way of preparing squash, you could use this method with Butternut squash as well...I hope you enjoy it as much as my family does. Enjoy!

Ingredients

  • 1 - acorn squash
  • 2 tablespoons butter
  • 1 teaspoon nutmeg
  • 2 tablespoons brown sugar
  • salt - & pepper to taste

How To Make succulent roasted acorn squash

  • Step 1
    Slice your squash evenly in half. Cut the bottom of reach half ( the skin ) so it will sit upright on your baking sheet.
  • Step 2
    Remove the seeds.
  • Step 3
    Preheat oven to 450 degree F. Line a baking sheet with foil. Place the seeded squash on baking sheet. In the center of each squash halve, add 1 tablespoon of butter, 1/2 tsp nutmeg and 1 tablespoon brown sugar.
  • Step 4
    Place in oven and bake for at least 1 hour or until fork tender. During baking, occasionally baste the rim of squash. Serve with more butter, salt & pepper or even more brown sugar. Delicious!
