We eat this at cocktail parties as a dip with fritos, tortilla chips or crackers, or as a casserole with holiday dinners. Hope ya'll enjoy.

Ingredients

  • 2 packages frozen chopped spinach, the boxes
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 tablespoons chopped yellow onion
  • 1/2 cup evaporated milk
  • 1/2 cup vegatable liquor
  • 1/2 teaspoon black pepper
  • 3/4 teaspoon celery salt
  • 3/4 teaspoon garlic powder
  • 1-6oz package jalapeno cheese (used to use kraft, it was discontinued, so get any brand you can find, it is soft like velveta
  • 1 teaspoon worchestershire sauce
  • - red pepper to taste

How To Make spinach madeline

  • Step 1
    Cook spinach as per package, drain, reserving 1/2 cup of liquid. Melt butter over low heat, add flour stirring until blended, do not brown. Add reserved spinach liquid and evaporated milk, stirring constantly to avoid lumps.
  • Step 2
    Add seasonings, cheese (that has been cut up into small pieces, worchestershire sauce. Stir until cheese is melted and all is blended well. Add spinach. Taste and season to taste with red pepper.
  • Step 3
    Keep warm in a chafing dish and eat as a hot dip or butter some bread crumbs, sprinkle on top and bake as a casserole. Bake at 350 until bubbly.
