When our children were young we took them deer hunting every fall. Their schooling was done every morning then they would have the rest of the day to play and learn about nature and the outdoors. Wednesdays we would have a camp potluck, you had to bring a dish you created out of what you brought. Well I had lots of green beans so I said I would bring green beans.Well I didn't have any mushrooms so I thought ok we will go get some in the woods. The Kids learned how to find Shaggy Manes. From then on it became a tradition for Thanksgiving and Christmas. Hope you enjoy them as much our family has

Ingredients

  • 2 medium bags green beans, frozen
  • 1 medium onion, diced
  • 1/2 pound bacon, diced
  • 1 1/4 pounds mushrooms, sliced
  • 2 cloves garlic. minced
  • 1 1/2 cups cheddar cheese, shredded
  • - salt and pepper to taste

How To Make snow mountain green bean casserole 1976

  • Step 1
    Steam green beans 15 minutes.
  • Step 2
    Dice bacon, place in large skillet on med high heat. Sauté bacon until it is not limp. Dice onion, mice/shred garlic and mix with sautéed bacon, cook until onion is transparent.
  • Step 3
    Gently fold in sliced mushrooms, sauté until mushrooms are just starting to soften. Turn heat down to medium. Fold in steamed green beans. Fold mixture together and cook with skillet covered until beans, mushrooms and bacon flavors are blended, about 5-7 minutes. Fold mixture a couple of times while cooking.
  • Step 4
    Sprinkle shredded cheese over mixture. Turn off heat and cover. Serve. Cheese will melt while finishing meal and setting table. I sometimes sprinkle the top of the casserole with "French Fried Onions" .
