I had some fresh zucchini given to me by my neighbor. So I decided to slice them thin and saute them with a few other ingredients. The results were delicious.

Ingredients

  • 2 ounces grated parmesan cheese
  • 3 ounces cream cheese
  • 1 teaspoon dried basil - may use fresh basil to taste
  • 2 teaspoons garlic and herb seasoning
  • 6 slices bacon, cooked and crumbled
  • 1 tablespoon olive oil
  • 3 medium zucchini, sliced thin
  • 1 can 15oz cannellini beans, drained and rinsed
  • 2 ounces feta cheese, crumbled

How To Make simple zucchini side dish

  • Step 1
    Place parmesan cheese, and cream cheese in a small microwavable bowl. Microwave on high for 15-20 seconds until soft. Mix in basil and garlic and herb seasoning until well blended.
  • Step 2
    In a large saute pan, cook bacon until crisp. Cool and crumble. Set aside. Meanwhile, cut zucchini into thin slices.
  • Step 3
    In same saute pan, add cream cheese mixture, olive oil, cannellini beans and bacon. Saute lightly until everything is creamy and mixed well. Add zucchini to pan and press down slightly. Cover pan, cook on low heat until zucchini softens, about 5-7 minutes, stirring once.
  • Step 4
    When zucchini is cooked, top with feta cheese, and serve.
