sausage stuffed zucchini
i love this recipe it's so full of flavor .. everybody in my family likes it . it's light and delicious .

Ingredients
- 4 medium zucchini
- 1/4 cup marinara sauce
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 - roma tomatoes diced
- 1/2 cup red bell pepper diced
- 1 pound italian sweet sausage ,removed from casing
- 1/2 cup shredded mozzarella
- 2 tablespoons grated parmesan cheese
- 1/2 cup chopped onion .
- - salt and pepper to taste
How To Make sausage stuffed zucchini

Step 1cut zucchini the long way ,in half. with a spoon, carefully take out the inside of zucchini ,so that each zucchini boat should be about 1/4 inch thick.

Step 2put a pot of boiling water and add zucchini when it boils . let it cook for 2 minutes . drain . let it cool.

Step 3preheat oven to 400. ligtly grease a 9x13 baking dish. cover bottom with marinara sauce .

Step 4cook sausage until is nicely browned. remove from pan. add oil to pan and saute' diced pepper, minced garlic and chopped onion. add sausage and let everything cook together for 2 or 3 minutes .season with salt and pepper to taste .

Step 5use a small spoon to scoop sausage mixture and spoon it into zucchini boats . sprinkle parmesan cheese and mozzarella cheese .

Step 6bake at 400, for 35 minutes or until cheese is melted absolutely delicious . enjoy!!!!
