Ingredients

4 mediumzucchini
-
1/4 cmarinara sauce
-
1 Tbspolive oil
-
3 clovegarlic, minced
-
2roma tomatoes diced
-
1/2 cred bell pepper diced
-
1 lbitalian sweet sausage ,removed from casing
-
1/2 cshredded mozzarella
-
2 Tbspgrated parmesan cheese
-
1/2 cchopped onion .
-
·salt and pepper to taste
How to Make sausage stuffed zucchini
- cut zucchini the long way ,in half. with a spoon, carefully take out the inside of zucchini ,so that each zucchini boat should be about 1/4 inch thick.
- put a pot of boiling water and add zucchini when it boils . let it cook for 2 minutes . drain . let it cool.
- preheat oven to 400. ligtly grease a 9x13 baking dish. cover bottom with marinara sauce .
- cook sausage until is nicely browned. remove from pan. add oil to pan and saute' diced pepper, minced garlic and chopped onion. add sausage and let everything cook together for 2 or 3 minutes .season with salt and pepper to taste .
- use a small spoon to scoop sausage mixture and spoon it into zucchini boats . sprinkle parmesan cheese and mozzarella cheese .
- bake at 400, for 35 minutes or until cheese is melted
