sausage stuffed zucchini

i love this recipe it's so full of flavor .. everybody in my family likes it . it's light and delicious .

Ingredients

  • 4 medium zucchini
  • 1/4 cup marinara sauce
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 2 - roma tomatoes diced
  • 1/2 cup red bell pepper diced
  • 1 pound italian sweet sausage ,removed from casing
  • 1/2 cup shredded mozzarella
  • 2 tablespoons grated parmesan cheese
  • 1/2 cup chopped onion .
  • - salt and pepper to taste

How To Make sausage stuffed zucchini

  • Step 1
    cut zucchini the long way ,in half. with a spoon, carefully take out the inside of zucchini ,so that each zucchini boat should be about 1/4 inch thick.
  • Step 2
    put a pot of boiling water and add zucchini when it boils . let it cook for 2 minutes . drain . let it cool.
  • Step 3
    preheat oven to 400. ligtly grease a 9x13 baking dish. cover bottom with marinara sauce .
  • Step 4
    cook sausage until is nicely browned. remove from pan. add oil to pan and saute' diced pepper, minced garlic and chopped onion. add sausage and let everything cook together for 2 or 3 minutes .season with salt and pepper to taste .
  • Step 5
    use a small spoon to scoop sausage mixture and spoon it into zucchini boats . sprinkle parmesan cheese and mozzarella cheese .
  • Step 6
    bake at 400, for 35 minutes or until cheese is melted absolutely delicious . enjoy!!!!
