i love this recipe it's so full of flavor .. everybody in my family likes it . it's light and delicious .

1/4 c
marinara sauce
1 Tbsp
olive oil
3 clove
garlic, minced
roma tomatoes diced
1/2 c
red bell pepper diced
1 lb
italian sweet sausage ,removed from casing
1/2 c
shredded mozzarella
2 Tbsp
grated parmesan cheese
1/2 c
chopped onion .
salt and pepper to taste

How to Make sausage stuffed zucchini


  • 1cut zucchini the long way ,in half. with a spoon, carefully take out the inside of zucchini ,so that each zucchini boat should be about 1/4 inch thick.
  • 2put a pot of boiling water and add zucchini when it boils . let it cook for 2 minutes . drain . let it cool.
  • 3preheat oven to 400. ligtly grease a 9x13 baking dish. cover bottom with marinara sauce .
  • 4cook sausage until is nicely browned. remove from pan. add oil to pan and saute' diced pepper, minced garlic and chopped onion. add sausage and let everything cook together for 2 or 3 minutes .season with salt and pepper to taste .
  • 5use a small spoon to scoop sausage mixture and spoon it into zucchini boats . sprinkle parmesan cheese and mozzarella cheese .
  • 6bake at 400, for 35 minutes or until cheese is melted
    absolutely delicious . enjoy!!!!
