I love hominy, Bubba doesn't. Bubba loves corn, and I don't. We are usually on the same page about everything but that. I learned this recipe when we lived in Arizona when I was cooking at this bar down the road from where we had a cabin.

whole kernel corn, (yellow or white or mixed), drained
2 slice
cans chopped green chilies
1 tsp
pepper
1 tsp
cayenne pepper
1/2 tsp
salt
1 tsp
comino (cumin) ground
2 (8) oz
packages cream cheese
1 c
whole milk
4 Tbsp
butter

How to Make Santa Fe Corn

Step-by-Step

  • 1Preheat oven to 350 degrees. Grease a large casserole.
  • 2Combine corn, green chilies, peppers, salt, and comino.
  • 3In the top of a double broiler melt cream cheese and butter, adding milk and stirring until smooth.
  • 4mix with the corn mixture and pour into the prepared casserole. Bake for 25 to 30 minutes, or until bubbly.
