Santa Fe Corn

I love hominy, Bubba doesn't. Bubba loves corn, and I don't. We are usually on the same page about everything but that. I learned this recipe when we lived in Arizona when I was cooking at this bar down the road from where we had a cabin.

  • 4 can(s)
    whole kernel corn, (yellow or white or mixed), drained
  • 2 slice
    cans chopped green chilies
  • 1 tsp
  • 1 tsp
    cayenne pepper
  • 1/2 tsp
  • 1 tsp
    comino (cumin) ground
  • 2 (8) oz
    packages cream cheese
  • 1 c
    whole milk
  • 4 Tbsp

How to Make Santa Fe Corn


  1. Preheat oven to 350 degrees. Grease a large casserole.
  2. Combine corn, green chilies, peppers, salt, and comino.
  3. In the top of a double broiler melt cream cheese and butter, adding milk and stirring until smooth.
  4. mix with the corn mixture and pour into the prepared casserole. Bake for 25 to 30 minutes, or until bubbly.
