This is a wonderful recipe for basic roasted zucchini and tomatoes. I've served it as a vegetable side dish as well as spooned over cooked spaghetti noodles.

Ingredients
- 2 medium zucchini, chopped
- 20 large cherry tomatoes, halved
- - olive oil flavored cooking spray, nonfat
- 1 teaspoon sea salt
How To Make roasted tomatoes and zucchini

Step 1Preheat oven to 450°F. Line a small baking sheet with aluminum foil (for easy clean-up), and lightly mist the foil with the cooking spray.

Step 2Place tomatoes and zucchini on baking sheet, and lightly mist with the cooking spray. Then sprinkle the sea salt evenly over the vegetables.

Step 3Roast in oven until vegetables start to lightly char, about 15-20 minutes. Serve immediately.
