Ingredients

  • 1 1/2 lb
    fresh asparagus
  • 1 1/2 c
    tomato, grape/cherry,halved
  • 3 Tbsp
    pine nuts
  • 3 Tbsp
    canola oil
  • 2 clove
    garlic,minced
  • 1 tsp
    kosher salt
  • 1/2 Tbsp
    pepper
  • 1 Tbsp
    lemon juice
  • 1/3 c
    parmesan,cheese,greated
  • 1 tsp
    lemon peel, greated

How to Make Roasted Asparagus

Step-by-Step

  1. Put asparagus, tomatoes and pine nuts in a foil-lined baking sheet. Mix 2 Tablespoon oil, garlic, salt, and pepper; toss with asparagus.
  2. Bake at 400 for 15 to 20 minutes or just tender. Drizzle with remaining oil and lemon juice; sprinkle with cheese and lemon peel. Toss to combine.
