Really good soufflé. Great alternative to the usually yam soufflé.

Ingredients For pumpkin souffle

  • 2 c
    cooked pumpkin or canned
  • 1/3 c
    heavy cream
  • 3 Tbsp
    melted butter
  • 2 lg
    eggs beaten
  • 1 tsp
    vanilla
  • 1/2 c
    sugar
  • 2 Tbsp
    flour
  • 1 tsp
    cinnamon
  • 1/2 tsp
    each ground cloves and nutmeg
  • TOPPING
  • 1 c
    vanilla wafer cookies ground
  • 1/2 c
    brown sugar
  • 1/2 stick
    butter melted

How To Make pumpkin souffle

  • 1
    Preheat oven 350 degrees. Mix all ingredients except topping ingredients together and place in a greased casserole pan.

    Bake for 30 minutes or until set up. Ground the cookies in a food processor and add the brown sugar and butter. Spoon over top of casserole. Bake an additional 10 minutes.
