Marsala Carrot Mash

8 ozpotatoes peeled cut thin
1 lbcarrots cut in slices
1/4 cheavy cream
2 Tbspmarsala wine or orange liquor
1 Tbsporange zest
2 Tbspsoftened butter
·s&p to taste
How to Make Marsala Carrot Mash
- Add potatoes to saucepan, add water to cover, bring to boil and cook for 5min. Then add carrot slices. Continue cooking until both vegetables are completely tender (about 20-25min)
Drain and return vegetables to the pan. Working over a low heat dry vegetables off for about 5min, mixing as needed.
Transfer dried vegetables to a food processor and add butter, cream, s&p, marsala wine & orange zest.
Adjust flavor with seasonings to Your taste.
This can be added to a piping bag to decorate plate.
