Saw this on TV, it sounded so good for a quick summer veggie salad. Tried it and loved it!

Ingredients

  • 1 cup sugar
  • 1 cup red wine vinegar
  • 1/2 cup olive oil
  • 16oz bags frozen green beans, thawed
  • 16oz bags frozen peas, thawed
  • 2 - sweet onions, sliced thin
  • 1 - red pepper, sliced
  • pinch - salt
  • 2oz jars red pimento (optional)

How To Make marinated vegetable salad

  • Step 1
    Cook together the sugar and red wine until sugar is dissolved. Cool.
  • Step 2
    add olive oil and mix well.
  • Step 3
    Mix vegetables in a large bowl, pour cooled marinade over the vegetables. Cover and refrigerate for 24 hours.
