Saw this on TV, it sounded so good for a quick summer veggie salad. Tried it and loved it!

Ingredients

  • 1 c
    sugar
  • 1 c
    red wine vinegar
  • 1/2 c
    olive oil
  • 16oz bag(s)
    frozen green beans, thawed
  • 16oz bag(s)
    frozen peas, thawed
  • 2
    sweet onions, sliced thin
  • 1
    red pepper, sliced
  • pinch
    salt
  • 2oz jar(s)
    red pimento (optional)

How to Make Marinated Vegetable Salad

Step-by-Step

  1. Cook together the sugar and red wine until sugar is dissolved. Cool.
  2. add olive oil and mix well.
  3. Mix vegetables in a large bowl, pour cooled marinade over the vegetables. Cover and refrigerate for 24 hours.
