jeanne raby's pea salad 1/12/14
Hubs and I were introduced to this Pea Salad when we attended our Senior Citizen's Christmas Party (2013)at Grace Baptist Church. We both loved it at first bite. After some investigation we found out that it was made by our very own, Jeanne Raby, a 90 year-old World War II veteran. She's a wonderful fun-loving lady that has more energy than I do and she's old enough to be my mother. Anyway, she was kind enough to share the recipe with me. QUICK and EASY to make!! 1/12/14

Ingredients
- 2 cans (15oz size) peas, drained
- 1/2 - small onion, diced (more or less to taste)
- 2-3 - hard boiled eggs, chopped, diced or sliced
- 3-4 tablespoons mayonnaise, i use 3 tablespoons of hellman's
- - salt to taste
How To Make jeanne raby's pea salad 1/12/14

Step 1Assemble ingredients.

Step 2Drain the canned peas.

Step 3Place peas in a medium-sized mixing bowl.

Step 4Add the diced onion, hard-boiled eggs, mayonnaise and a touch of salt to the bowl. Amount of salt varies per your taste. Start out with just a sprinkle of salt and add until it tastes good to you. JUST A PINCH of salt is enough for us.

Step 5Mix well.

Step 6Serve. Can be served immediately or placed in the refrigerator to cool first and then serve.
