jalapeño corn side dish

This is a favorite at all of our family gatherings- even Thanksgiving! It's creamy and delicious. You can increase or decrease the jalapeño to your desired heat level.

Ingredients

  • 2 cans mexi-corn, drained ( corn and peppers mixed)
  • 8 ounces cream cheese, room temp
  • 2 tablespoons margarine or butter
  • 1/4 cup milk
  • 1 can diced mild green chilies, 4 oz can, undrained
  • 1/2 teaspoon garlic powder or one clove chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1-2 tablespoon diced jalapeño, fresh or from the can
  • 1/2 cup cheddar cheese, shredded

How To Make jalapeño corn side dish

  • Step 1
    Grease an 8X8 pan or casserole dish. Preheat overn to 350 degrees. Drain corn. In saucepan or microwave safe bowl, melt butter. Mix room temperature cream cheese with butter until well blended.
  • Step 2
    Add all other ingredients and stir well.
  • Step 3
    Bake at 350 for 25- 30 minutes until bubbly.
  • Step 4
    NOTE: If using fresh jalapeño, use plastic cooking gloves to protect your hands when cleaning out the seeds and chopping it. The oil from the jalapeño can be very irritating to skin.
