Ingredients
- 8 - medium sized plantains( carribean bannanas)
- 3/4 cup brown sugar
- 2 tablespoons dark maple syrup or molasses
- 1/4 - canola or safflower oil
How To Make im on the plantain-shuns

Step 1Peel the plantains like a banana, slice thick at a slight angle . Makes around 20-25 pieces, Heat up oil in large skillet, medium heat.. Add the plantains,,, sprinkle at first with just a moderate amount of brown sugar.. as they cook quickly.. turn them over.. Add a pad of butter and then on the second side.. add the rest of the Brown sugar and molasses.. or syrup.. just to liquify it.. Turn pieces until lightly browned and very gooey.. Pick pieces up and turn them onto a paper towel to drain. You know they are done when they are very soft and gooey.. They should have a soft and sticky consistency.

Step 2These are very tasty as a side dish. I like to squeeze a little lime or orange juice on them. They taste great with ground beef dishes, catfish , cajun style dishes or just eat them alone in a bowl of rice.. They are a sweet side!
