  • 6 medium
    carrots, cut into 1/4 inch slices (about 3 cups)
  • 1 Tbsp
  • 1 Tbsp
    fresh mint, chopped (or 1 tsp. dried mint)

How to Make Honey-Mint Carrots


  1. In a 12 inch skillet, heat 1 inch of water to boiling.
  2. Add carrots and re-heat to boiling.
  3. Reduce heat and simmer 10 minutes until tender-crisp. Drain VERY well.
  4. Toss with honey and mint.
