This is one of the few ways the kids actually like carrots.

Ingredients

  • 6 medium carrots, cut into 1/4 inch slices (about 3 cups)
  • 1 tablespoon honey
  • 1 tablespoon fresh mint, chopped (or 1 tsp. dried mint)

How To Make honey-mint carrots

  • Step 1
    In a 12 inch skillet, heat 1 inch of water to boiling.
  • Step 2
    Add carrots and re-heat to boiling.
  • Step 3
    Reduce heat and simmer 10 minutes until tender-crisp. Drain VERY well.
  • Step 4
    Toss with honey and mint.
