This is an easy side dish that has a little unexpected twist with the green chilies. My family always requests it for holiday dinners.

Ingredients

  • 2 can(s)
    white hominy, drained
  • 2 can(s)
    yellow corn kernels, drained
  • 1 can(s)
    4 oz chopped green chilies
  • 1 Tbsp
    corn starch
  • 8 oz
    sour cream
  • 1 c
    shredded monterey jack cheese
  • 1 1/2 c
    shredded cheddar cheese
  • ·
    salt and pepper

How to Make Hominy and Corn Casserole

Step-by-Step

  1. Preheat oven to 350
  2. Combine everything except the cheeses.
  3. Spoon 1/2 into a greased casserole dish.
  4. Mix the cheeses and sprinkle 1/2 over the mixture.
  5. Repeat the layers.
  6. Cover. Bake at 350 for 40 minutes or until bubbling all through. Remove cover for 5 minutes and let the cheese brown a little.
