This is an easy side dish that has a little unexpected twist with the green chilies. My family always requests it for holiday dinners.

Ingredients

  • 2 cans white hominy, drained
  • 2 cans yellow corn kernels, drained
  • 1 can 4 oz chopped green chilies
  • 1 tablespoon corn starch
  • 8 ounces sour cream
  • 1 cup shredded monterey jack cheese
  • 1 1/2 cups shredded cheddar cheese
  • - salt and pepper

How To Make hominy and corn casserole

  • Step 1
    Preheat oven to 350
  • Step 2
    Combine everything except the cheeses.
  • Step 3
    Spoon 1/2 into a greased casserole dish.
  • Step 4
    Mix the cheeses and sprinkle 1/2 over the mixture.
  • Step 5
    Repeat the layers.
  • Step 6
    Cover. Bake at 350 for 40 minutes or until bubbling all through. Remove cover for 5 minutes and let the cheese brown a little.
