Nice simple side dish from Cooking Light, April 1995.

Ingredients

  • 3 1/2 pounds green beans
  • 2 tablespoons olive oil
  • 1/2 cup shallots, minced
  • 2 tablespoons water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

How To Make green beans with shallots

  • Step 1
    Trim ends from beans, and remove strings.
  • Step 2
    Drop beans into a large stockpot of boiling water; cook 10 minutes or until crisp-tender. Drain.
  • Step 3
    Heat oil in stockpot over medium heat.
  • Step 4
    Add shallots; saute‚ 3 minutes or until tender.
  • Step 5
    Add green beans and water; cook 3 minutes or until beans are tender, stirring occasionally.
  • Step 6
    Remove from heat, and stir in salt and pepper.
