I concocted this after having a grape tomato salad at the Fleet Reserve Club in Annapolis, MD. I sometimes use blue cheese or Gorgonzola.

Blue Ribbon Recipe

This quick and easy grape tomato salad is a wonderful mix of sweet and tangy. Adding sugar to the dressing balances the flavors. Tangy, with just the right amount of sweetness, honey could even be used as a sweetener. The grape tomatoes are sweet next to the dressing and salty Feta cheese. Red onion adds a little bite to this delicious summer salad.

Ingredients

  • 8 ounces balsamic vinaigrette
  • 2 - 3 packages Splenda or sugar
  • 2 packages grape tomatoes (10 oz each)
  • 1 small red onion, chopped
  • 1 cup Feta cheese, or more
  • salt and pepper, to taste

How To Make grape tomato salad

  • Combine balsamic vinaigrette and sweetener.
    Step 1
    Whisk balsamic vinaigrette and Splenda (or sugar) together.
  • Cut grape tomatoes in half.
    Step 2
    Cut tomatoes in half.
  • Combine tomatoes, onion, and Feta. Salt and pepper.
    Step 3
    Combine tomatoes, onion, and Feta. Salt and pepper if desired.
  • Pour the dressing over the tomatoes.
    Step 4
    Pour dressing over the mixture. Cover and chill to blend flavors.
