Fried Zucchini

Fresh zucchini is sliced, dredged in seasoned flour, then fried to a crisp golden brown.
This is one of those "I bet you can't eat just one" recipes.

1 medium
zucchini, sliced into 1/4 inch rounds
1 c
all purpose flour
1 pinch
salt and pepper, to taste
1 tsp
crushed red pepper flakes
1 pinch
onion powder, optional
1 pinch
garlic powder, optional
1 dash(es)
paprika, optional
1 large
2 Tbsp
olive oil, for frying

How to Make Fried Zucchini


  • 1In a medium size mixing bowl, mix together flour, salt and pepper, red pepper flakes, and any of the optional seasonings.
    Set aside
  • 2In another medium size mixing bowl, mix together egg and milk. Mix well.
  • 3Heat oil in skillet over medium heat.

    Dip zucchini slices into egg wash; using slight pressure, coat with flour mixture, tapping to remove excess.
  • 4Add zucchini to hot oil, taking care not to crowd the pan.
    Fry 3 to 4 minutes per side, depending on the size of the slices.

    Note: After frying two batches: drain skillet of accumulated food products and oil. Add fresh oil.
  • 5Drain fried slices on paper towels.

    Sprinkle with some additional salt and enjoy.
