When it comes to okra it's best to use the smallest ones. They are more tender and have smaller seeds.

How to Make Fried Okra

Step-by-Step

  1. Cut off and discard ends from okra and into 1/2 inch thick slices. Stir into buttermilk; cover and chill for 45 minutes.
  2. Combine cornmeal, flour, and salt in a bowl.
  3. Remove okra from bowl with slotted spoon, and discard buttermilk. Dredge okra, in batches, in the cornmeal mixture.
  4. Pour oil to depth of 2 inches into a cast iron skillet and heat to 375 degrees. Fry okra in batches 4 minutes or until golden brown. Drain on paper towel.
