Ingredients
- 1 - eggplant, peeled and cubed
- 1 tablespoon lemon juice
- 1/4 teaspoon black pepper
- 1/2 cup milk
- 1/2 stick oleo
- 1 small onion, chopped
- 1 cup cracker crumbs
- 1 cup cheese
- 1 - egg, beaten
- 1/2 cup bread crumbs
How To Make eggplant casserole

Step 1Boil Eggplant in salted water for 8 minutes. Drain and add remaining ingredients except bread crumbs. Pour into casserole dish, sprinkle with bread crumbs and bake for 30 minutes in a 350 oven.
