deep fried green beans

In our town there is a little restaurant called Cane River Bar & Grill that my sister, Cynthia, and I love to go to. When we go we order this appetizer. Since I loved them so much I've always been on the lookout for a recipe for them. I found this little recipe a few months back and had to make it my own. It originally called for hot sauce, but I leave it out.

Ingredients

  • 1/2 cup dijon mustard
  • 1/4 cup honey
  • 1 1/2 teaspoons light soy sauce
  • - pinch of dry mustard
  • 4 cups canola oil, for frying
  • 2 large egg whites
  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups club soda
  • 1 pound green beans, ends trimmed
  • - salt, to taste

How To Make deep fried green beans

  • Step 1
    In a medium saucepan over low heat, whisk first 4 ingredients until warmed. Transfer sauce to a small bowl; let cool.
  • Step 2
    In a medium Dutch oven fitted with a thermometer over medium-high heat, heat oil to 350 degrees. In a medium bowl, whisk egg whites to soft peaks. Whisk in flour and club soda.
  • Step 3
    Working in batches, dip beans in batter, then lower into oil. Fry until golden brown, about 3 minutes. Drain on paper towels; sprinkle with salt. Serve with dipping sauce.
