As long as I can remember, my Gram would make these carrots for every holiday...we got out of the tradition after she passed...well, my sister requested the tradition be brought back...so, who better than to bring it back , than sweet lil ole me...lol! Making them brought back so many memories...enjoy!

Ingredients

  • 2 pounds baby carrots or sliced carrots
  • 1 cup packed, brown sugar
  • 1 teaspoon vanilla or maple extract
  • 1/2 cup butter
  • 1/4 - 1/2 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1 1/2 teaspoons corn starch - optional
  • 1 1/2 teaspoons water- optional

How To Make dandy candied carrots - grams

  • Step 1
    Place the carrots in a large sauce pan; covered with water and a sprinkling of kosher salt. Bring to a boil over med - high heat. Cook until fork tender. Drain
  • Step 2
    Add the carrots back to the pan; add butter, salt, brown sugar, pepper, vanilla, simmer over medium heat for about 5 minutes. Make a slurry out of corn starch and water if you desire a thicker glaze. I always thicken the sauce some. It adheres to the carrots much better. Doesn't effect the taste at all.
  • Step 3
    Pour into a serving dish, and serve hot.
