I stumbled across this recipe while trying to find new ways to serve celery. Inspired by a cooked side dish and converted to a salad-- recipe c/o Delicious Living. French-East Indian combination of flavors! Super quick, super easy!

  • DRESSING:
  • 2-3 tablespoons extra virgin olive oil, or more if needed

  • - salt, to taste
  • - fresh cracked black pepper, to taste
  • GARNISH:
  • 1 - lemon, cut up into small wedges
  • - fresh italian parsley or fresh cilantro
  • 1/4 teaspoon red chili pepper flakes (i used much less!)

How To Make curried celery salad

Whisk together the dressing ingredients and set aside.
  • Step 2
In a non-reactive serving bowl combine the celery, garlic and shallot.

Pour the dressing over the vegetables. Toss to coat. Cover and allow the flavors to marry-at least 1 hour. Just before serving, garnish with the lemon wedges, fresh parsley or cilantro and a *light* sprinkle of red chili pepper flakes.
