okra, washed and trimmed at the ends
1 Tbsp
olive oil
1 large
1 large
green pepper, chopped
1 clove
3 large
tomatoes, chopped fine, reserve juice
salt and pepper to taste
2 Tbsp
chopped parsley

How to Make Creole Okra


  • 1Brown onion in olive oil.
    Add chopped green pepper and garlic.
    Cook for about 10 minutes, or until tender.
  • 2Add chopped tomatoes with reserved juice, salt and pepper.

    Add okra and simmer slowly for about 20 minutes, or until tender.
  • 3Pour into serving dish, garnish with chopped parsley
