I'm not a huge fan of spinach, but creamed spinach I love! The creamy goodness is hard not to love. So I decided to make a go at it and I think it came out great! I think this gives better flavor then other recipes that just use heavy cream. 2 of us ate it so I say it serves 2, but honestly l could have eaten the whole thing myself! I hope you enjoy :)

Ingredients

  • 1 can spinach (or about 15oz frozen, thawed)
  • 4 ounces cream cheese (reg, low-fat, or fat-free can be used)
  • 1/4 cup milk
  • 1 tablespoon chopped garlic
  • 1 tablespoon onion powder
  • 1 teaspoon butter
  • 1/2-1 cup shredded cheese (your favorite flavor, i used cheddar/mozzarella blend but i think a sharper flavor would be great too)

How To Make creamed spinach

  • Step 1
    Drain spinach, removing as much liquid as possible. I put it in a sifter and used a fork to push the spinach against the sides.
  • Step 2
    Add all ingredients except shredded cheese to a medium sauce pan. Cook over medium heat, stirring regularly, until cream cheese melts fully and becomes smooth.
  • Step 3
    Add shredded cheese and mix until completely melted. Serve hot. Enjoy!
