Quick and easy way to use up left over corn or especially good using fresh off the cob corn.

Ingredients

  • 3 cups oil for frying
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt (or less to taste)
  • 1-3 teaspoon sugar (based on how sweet you like your fritters)
  • 1 - egg, beaten lightly
  • 1/2 cup milk
  • 1 tablespoon butter, melted
  • 2 milliliters ears of corn, kernels cut off or a 12 ounce can/bag of frozen corn
  • - honey for drizzling on finished fritters, optional

How To Make corn fritters

  • Step 1
    In a deep frying pan, heat a couple Inches of oil to 365.
  • Step 2
    In a medium bowl, combine all ingredients until just mixed.
  • Step 3
    Drop batter by teaspoon-tablespoonfuls into hot oil. Allow to fry until golden on one side then turn to cook other side. Roughly 2 minutes on each side. Tip: a chopstick makes a great tool for turning the fritters.
  • Step 4
    Drain on paper towels and drizzle with a little honey. Serve warm.
