  • 1/2 c
    onion, chopped
  • 1/4 c
    butter or margarine
  • 3 c
    zucchini, coarsely shredded
  • 2 tsp
    fresh basil, minced (or 1/2t dried)
  • 1/2 tsp
  • 1/8 tsp
    garlic powder
  • 4 oz
    cheddar cheese, shredded
  • 1 c
    tomato, diced
  • 2 Tbsp
    black olives, sliced

How to Make Cheesy Zucchini Saute


  1. In a skillet, saute onion in butter until crisp tender.
  2. Stir in zucchini, basil, salt and garlic powder.
  3. Cook and stir for 4-5 minutes or until zucchini is crisp tender.
  4. Sprinkle with cheese, tomato and olives.
  5. Cover and cook for 4-5 minutes or until cheese is melted.
