Ingredients

  • 1/2 cup onion, chopped
  • 1/4 cup butter or margarine
  • 3 cups zucchini, coarsely shredded
  • 2 teaspoons fresh basil, minced (or 1/2t dried)
  • 1/2 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 4 ounces cheddar cheese, shredded
  • 1 cup tomato, diced
  • 2 tablespoons black olives, sliced

How To Make cheesy zucchini saute

  • Step 1
    In a skillet, saute onion in butter until crisp tender.
  • Step 2
    Stir in zucchini, basil, salt and garlic powder.
  • Step 3
    Cook and stir for 4-5 minutes or until zucchini is crisp tender.
  • Step 4
    Sprinkle with cheese, tomato and olives.
  • Step 5
    Cover and cook for 4-5 minutes or until cheese is melted.
