Ingredients

  • 2 pounds frozen corn
  • 2 tablespoons butter, cut into cubes
  • 2 - poblano chile peppers, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon coarsely ground black pepper
  • 1 cup (about 4 oz) shredded sharp cheddar cheese
  • 3 ounces cream cheese, cut into cubes

How To Make cheesy corn & peppers

  • Step 1
    Coat inside of 3 1/2-to 4-quart Crock-Pot slow cooker with nonstick cooking spray.
  • Step 2
    Combine all ingredients except Cheddar cheese and cream cheese in Crock-Pot slow cooker.
  • Step 3
    Cover. Cook on high 2 hours.
  • Step 4
    Stir in cheeses. Cover and cook on high 15 minutes more or until cheeses melt.
