Ingredients
- 2 tablespoons coconut oil
- 1 medium head cauliflower
- 1/2 - white onion
- 1-2 clove garlic, peeled
- 1/4 cup water or broth
- - salt, to taste
- - white pepper, to taste
- - chopped parsley or other favorite fresh herb
- - other seasoning, your choice such as italian seasoning, etc. (optional)
How To Make cauliflower "rice"

Step 1Grate the cauliflower, onion and garlic *or* PULSE in a food processor until the cauliflower resembles rice grains.

Step 2Heat coconut oil in a sauté pan over medium high heat. Sauté onion and garlic for about 3 minutes. Add cauliflower, stir well.

Step 3Add the water or vegetable broth, sea salt and pepper. Sautè for about 5 minutes until cauliflower is slightly tender.

Step 4Place cauliflower in serving bowl and top with chopped parsley (optional). Serve hot.
