cassies grilled sweet corn salad

Had some delicious sweet corn, so this is what I threw together...I used what I had on hand...it turned out delicious...I love the taste of the charred corn in this salad...you could use frozen corn that's been thawed and drained. Enjoy! My photos

Ingredients

  • 5 - 6 medium fresh, sweet corn on cob
  • 1 small red onion, diced small
  • 3 - 4 tablespoons green or red bell pepper, diced - could grill as well...i didn't
  • 12 - sweet grape tomatoes - halved
  • 3 - 4 slices fried crisp bacon & crumbled or real bacon bits
  • 1/4 cup feta cheese crumbles or asiago would be great
  • - kosher salt & cracked black pepper to taste
  • 3 tablespoons each - olive oil and rice vinegar or your favorite
  • 1/2 teaspoon dried basil or 1 tsp fresh, chopped
  • red - pepper flakes to taste - optional

How To Make cassies grilled sweet corn salad

  • Step 1
    Preheat your grill. Husk corn and I pour a little olive oil in my hand and rub each cob until lightly coated...salt and place on grill. I grill just until some char marks and most of the starchiness is gone...about 5 - 6 minutes, turning frequently. Let cool, then I use my mandolin to remove from cob...can use a sharp knife.
  • Step 2
    Place pepper, onion, tomatoes in a bowl, then add the cooled corn.
  • Step 3
    In a small dish, mix the vinegar, salt, pepper, oil and basil. Pour over corn mixture and toss well to coat. Taste to see if needs more seasonings. Chill for a few hours, then before serving - toss in some bacon and feta cheese if desired. Enjoy!
