Ingredients
- 1 pound carrots, coarsely chopped
- 1/2 cup butter
- 1 teaspoon pure vanilla extract
- 3 large eggs
- 3 tablespoons all purpose flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 3/4 cup white sugar
How To Make carrot souffle

Step 1Cook carrots until tender in boiling salted water. Drain and mash.

Step 2Stir in butter, vanilla and eggs. Mix well.

Step 3Sift together flour, baking powder, salt and sugar. Stir well into carrot mixture and blend until smooth.

Step 4Pour into buttered casserole dish. Bake 45 minutes at 350 degrees.
