Ingredients

1 lb
carrots, coarsely chopped
1/2 c
butter
1 tsp
pure vanilla extract
3 large
eggs
3 Tbsp
all purpose flour
1 tsp
baking powder
3/4 tsp
salt
3/4 c
white sugar

How to Make Carrot Souffle

Step-by-Step

  • 1Cook carrots until tender in boiling salted water. Drain and mash.
  • 2Stir in butter, vanilla and eggs. Mix well.
  • 3Sift together flour, baking powder, salt and sugar. Stir well into carrot mixture and blend until smooth.
  • 4Pour into buttered casserole dish. Bake 45 minutes at 350 degrees.
