Ingredients

  • 1 lb
    carrots, coarsely chopped
  • 1/2 c
    butter
  • 1 tsp
    pure vanilla extract
  • 3 large
    eggs
  • 3 Tbsp
    all purpose flour
  • 1 tsp
    baking powder
  • 3/4 tsp
    salt
  • 3/4 c
    white sugar

How to Make Carrot Souffle

Step-by-Step

  1. Cook carrots until tender in boiling salted water. Drain and mash.
  2. Stir in butter, vanilla and eggs. Mix well.
  3. Sift together flour, baking powder, salt and sugar. Stir well into carrot mixture and blend until smooth.
  4. Pour into buttered casserole dish. Bake 45 minutes at 350 degrees.
