My neighbor gave me this recipe,she makes it for me so I guess she decided it was time for me to make it myself. It's delicious when she makes it so I hope I can made her proud.

Ingredients

  • - 1 t. oil
  • - 1/2 t. butter
  • - 1 medium onion,sliced thin
  • - 4 medium cloves garlic, chopped
  • - 2 cups zucchini, diced into 1/2 -inch cubes
  • - 15 oz can diced tomatoes, drained
  • - 4 oz can of diced green chili
  • - 2 c corn,canned or frozen
  • - 1/4 cup chopped cilantro
  • - 1 t. dried oregano
  • - salt and black pepper,to taste

How To Make calabacitas

  • Step 1
    Heat 1 T. oil and melt butter in a skillet. Sauté onions over medium heat for about 5 minutes stirring frequently, until translucent. Add garlic and sauté for another minute. Add zucchini, green chili, and corn, cook for another 3 minutes or so until vegetables are tender, stirring often. Add tomatoes and continue to cook for another couple of minutes. Stir in oregano, salt, and pepper.
