A spicy eggplant dish recipe from deep in the bayous of Louisiana. Very flavorful and different.

Ingredients

2 small
eggplants
2 medium
onions, chopped
1 stick
butter, melted
4
egg yolks, slightly beaten
1/2 c
parmesan cheese, grated
1 tsp
salt
8 c
italian bread crumbs
1/2 c
milk
1/2 tsp
cayenne pepper
1/2 tsp
baking powder
1 lb
cheddar cheese, grated
1 tsp
tony chachere's seasoning mix

How to Make Cajun Eggplant Dressing

Step-by-Step

  • 1Dice eggplants into 1-12 cubes. Cook eggplant and chopped onion in boiling water to cover for 20 minutes or until tender. Drain and mix with ingredients except cheese and cajun seasonint.
  • 2Place mixture into greased casserole and add grated cheddar cheese and creole seasoning on top.
  • 3Bake at 350 degrees for 30 minutes or until cheese is melted and casserole is bubbly.
