A spicy eggplant dish recipe from deep in the bayous of Louisiana. Very flavorful and different.

Ingredients

  • 2 small eggplants
  • 2 medium onions, chopped
  • 1 stick butter, melted
  • 4 - egg yolks, slightly beaten
  • 1/2 cup parmesan cheese, grated
  • 1 teaspoon salt
  • 8 cups italian bread crumbs
  • 1/2 cup milk
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon baking powder
  • 1 pound cheddar cheese, grated
  • 1 teaspoon tony chachere's seasoning mix

How To Make cajun eggplant dressing

  • Step 1
    Dice eggplants into 1-12 cubes. Cook eggplant and chopped onion in boiling water to cover for 20 minutes or until tender. Drain and mix with ingredients except cheese and cajun seasonint.
  • Step 2
    Place mixture into greased casserole and add grated cheddar cheese and creole seasoning on top.
  • Step 3
    Bake at 350 degrees for 30 minutes or until cheese is melted and casserole is bubbly.
