Ingredients
- 2 small eggplants
- 2 medium onions, chopped
- 1 stick butter, melted
- 4 - egg yolks, slightly beaten
- 1/2 cup parmesan cheese, grated
- 1 teaspoon salt
- 8 cups italian bread crumbs
- 1/2 cup milk
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon baking powder
- 1 pound cheddar cheese, grated
- 1 teaspoon tony chachere's seasoning mix
How To Make cajun eggplant dressing

Step 1Dice eggplants into 1-12 cubes. Cook eggplant and chopped onion in boiling water to cover for 20 minutes or until tender. Drain and mix with ingredients except cheese and cajun seasonint.

Step 2Place mixture into greased casserole and add grated cheddar cheese and creole seasoning on top.

Step 3Bake at 350 degrees for 30 minutes or until cheese is melted and casserole is bubbly.
