bell pepper and bean salad
This is a super easy, healthy, and colorful side dish. Sometimes I use Red Kidney beans instead of the black beans. Both are good! You can use all the colors of the bell peppers or just a few.

Ingredients
- - 2 (15 ounce) cans black beans, drained and rinsed
- - 1 (16 ounce) can cannellini beans, drained and rinsed
- - 1 green bell pepper, chopped
- - 1 orange bell pepper, chopped
- - 1 yellow bell pepper, chopped
- - 1 red bell pepper, chopped
- - 1 cup red onion, chopped
- - 1 -2 garlic clove, minced
- - 1/2 cup fresh parsley, chopped
- - 1 large lemon, juiced
