bacon, spinach & egg scramble
This is an old family Southern favorite! My dad used to cook this for us! Cooking was his favorite thing to do...after fishing, that is! All 3 of us kids loved this dish and my children and grandchildren still love it! I've made several spinach-hating Converts thanks to this recipe! LOL You may find you really love Spinach too! (NOTE: I usually double this recipe when the grandchildren are here!)

Ingredients
- 3 cans spinach, drained
- 3 - eggs
- 5 slices bacon
- - bacon drippings
- - salt
- - pepper
How To Make bacon, spinach & egg scramble

Step 1Fry bacon until crispy and set aside.

Step 2Pour spinach into large skillet with bacon drippings. If on a diet, drain the bacon drippings out first. Stir occasionally and let the spinach cook until hot.

Step 3Crack eggs on top of hot spinach and season them with salt and pepper. Scramble the eggs into the spinach until the eggs are well mixed and done.

Step 4Sprinkle with crumbled bacon.
