Threw this together for a side for dinner! Its so tasty! Its a great change from a regular slaw or salad side!

Ingredients

  • 4
    ears corn
  • 1 tsp
    cumin
  • 1 tsp
    salt and pepper
  • ·
    butter spray
  • 2
    avocados
  • 1 Tbsp
    pimento chopped
  • 1
    lime or lemon zested and juiced (used lemon)
  • 1-2
    chopped green onion
  • 1/4 c
    cotija grated
  • 1 Tbsp
    fresh chopped cilantro

How to Make Avocado Crema Corn

Step-by-Step

  1. Spray corn with butter spray, sprinkle with cumin and s&p.
    Grill a few minutes on each side. Let cool.
  2. AVOCADO CREMA
    Peel and dice avocados add to processor with pimento, lemon zest and juice.
    Mix in bowl with cotija, cilantro and chopped green onion. Mix in few teaspoons of heavy cream if You want it creamier.
  3. Cut corn off ears, Scrape all the corn milk from ears and mix with avocado crema.
