Got this from my sister-in-law years ago. This has been a favorite of the family ever since. I don't like it quite as hot, so I cut back on onions and cheese.

Ingredients

2 sm. can(s)
veg all
1 c
miracle whip
1
med. chopped onion
1 small
package of monterey jack cheese w/ jalapenos
1 tube(s)
ritz butter crackers
1 stick
butter, melted

Step-By-Step

1Pre-heat oven to 350 degrees. Drain Veg All. Shred Monterey jack cheese w/jalapenos. Melt butter. Chop onions finely. Take 1 tube of Ritz crackers and make crumbs.
2In med. bowl, add Veg All, Shredded Cheese, onions and Miracle Whip. Mix well.
3In small bowl, mix cracker crumbs and butter.
4Spray or butter 10x13 glass casserole dish.
5Spread vegetable mixture into dish. Top with buttered cracker crumbs. Bake 40 min.
