How to Make Apple-poached beets
1In lg saucepan, combine 1/2 cup apple juice, water and brown sugar. Bring to a boil, stirring to dissolve sugar.
2Add beets. Return to a boil.Reduce heat. Cover and simmer until beets are tender, about 45 mins. Splash w/ remaining juice. Drizzle w/ honey. Sprinkle w/ parsley.
