- 3/4 cup apple juice
- 1/2 cup water
- 1 tablespoon light brown sugar
- 2-1/2 pound beets, peeled, cut into bite-size pieces
- - salt & pepper to taste
- - honey for drizzling
- 1 tablespoon snipped parsley
How To Make apple-poached beets

Step 1In lg saucepan, combine 1/2 cup apple juice, water and brown sugar. Bring to a boil, stirring to dissolve sugar.

Step 2Add beets. Return to a boil.Reduce heat. Cover and simmer until beets are tender, about 45 mins. Splash w/ remaining juice. Drizzle w/ honey. Sprinkle w/ parsley.
