I found this recipe typed on a yellowing sheet of memo paper tucked inside an old recipe book I bought at an estate sale.

Ingredients
- 3 pounds yellow squash
- 1/2 cup chopped onion
- 2 - beaten eggs
- 1/2 teaspoon black pepper
- 1 teaspoon salt
- 1 tablespoon sugar
- 4 tablespoons butter or margarine (1/2 stick)
- 1 to 1-1/2 cups bread crumbs
How To Make serendipity summer squash casserole

Step 1Preheat oven to 350F. Cut up squash and boil until tender. Drain thoroughly, then mash.

Step 2Combine all ingredients except butter and bread crumbs.

Step 3Place in a casserole or souffle dish (approx. 2-1/2 qt).

Step 4Melt butter and drizzle over squash. Sprinkle with enough bread crumbs to cover top.

Step 5Bake uncovered for about an hour or until slightly brown on top.
