I found this recipe typed on a yellowing sheet of memo paper tucked inside an old recipe book I bought at an estate sale.

Ingredients

3 lb
yellow squash
1/2 c
chopped onion
2
beaten eggs
1/2 tsp
black pepper
1 tsp
salt
1 Tbsp
sugar
4 Tbsp
butter or margarine (1/2 stick)
1 to 1-1/2 c
bread crumbs

Step-By-Step

1Preheat oven to 350F. Cut up squash and boil until tender. Drain thoroughly, then mash.
2Combine all ingredients except butter and bread crumbs.
3Place in a casserole or souffle dish (approx. 2-1/2 qt).
4Melt butter and drizzle over squash. Sprinkle with enough bread crumbs to cover top.
5Bake uncovered for about an hour or until slightly brown on top.
