I found this recipe typed on a yellowing sheet of memo paper tucked inside an old recipe book I bought at an estate sale.

Ingredients

  • 3 lb
    yellow squash
  • 1/2 c
    chopped onion
  • 2
    beaten eggs
  • 1/2 tsp
    black pepper
  • 1 tsp
    salt
  • 1 Tbsp
    sugar
  • 4 Tbsp
    butter or margarine (1/2 stick)
  • 1 to 1-1/2 c
    bread crumbs

How to Make Serendipity Summer Squash Casserole

Step-by-Step

  1. Preheat oven to 350F. Cut up squash and boil until tender. Drain thoroughly, then mash.
  2. Combine all ingredients except butter and bread crumbs.
  3. Place in a casserole or souffle dish (approx. 2-1/2 qt).
  4. Melt butter and drizzle over squash. Sprinkle with enough bread crumbs to cover top.
  5. Bake uncovered for about an hour or until slightly brown on top.
