I found this recipe typed on a yellowing sheet of memo paper tucked inside an old recipe book I bought at an estate sale.

Ingredients

  • 3 pounds yellow squash
  • 1/2 cup chopped onion
  • 2 - beaten eggs
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 4 tablespoons butter or margarine (1/2 stick)
  • 1 to 1-1/2 cups bread crumbs

How To Make serendipity summer squash casserole

  • Step 1
    Preheat oven to 350F. Cut up squash and boil until tender. Drain thoroughly, then mash.
  • Step 2
    Combine all ingredients except butter and bread crumbs.
  • Step 3
    Place in a casserole or souffle dish (approx. 2-1/2 qt).
  • Step 4
    Melt butter and drizzle over squash. Sprinkle with enough bread crumbs to cover top.
  • Step 5
    Bake uncovered for about an hour or until slightly brown on top.
