An easy, delicious, melt in your mouth sweet potato casserole. Great holiday dish.

Ingredients

  • 3 c
    mashed sweet potatoes (can use canned)
  • 3 Tbsp
    melted butter
  • 1/2 tsp
    salt
  • 1/4 c
    orange juice (hot)
  • 1 c
    crushed pineapple
  • 3 Tbsp
    brown sugar (optional)
  • ·
    miniature marshmallows

How to Make Sweet Potato Casserole

Step-by-Step

  1. Add butter, brown sugar, salt, orange juice to sweet potatoes. Beat until fluffy.
  2. Add drained pineapple to sweet potatoes.
  3. Put into a 1 1/2 quart casserole and dot with butter.
  4. Bake uncovered at 350 degrees for 20 minutes; top with marshmallows and bake for another 10 minutes or until marshmallows are browned and melted.
