Everybody loves this at the holidays. It's a rich dish full of flavor. I make it about twice a year at Thanksgiving and Christmas.

Ingredients
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/4 cup green bell pepper
- 1/2 cup sharp cheddar cheese grated
- 1-2 can shoe peg corn
- 1 can cream of celery soup
- 1/2 pint sour cream
- 1 stick butter, melted
- 1 - sleeve of ritz crackers
- SALT & PEPPER TO TASTE
How To Make shoe peg corn casserole

Step 1Mix together the first 8 ingredients. Plus add the salt & pepper.

Step 2Place mixture in a 9/13 greased casserole dish. I usually spray mine with cooking spray, typically Pam.

Step 3Melt butter and mix with Ritz crackers and spread that on top of the casserole.

Step 4Bake at 350 degrees for 45 minutes .
