Everybody loves this at the holidays. It's a rich dish full of flavor. I make it about twice a year at Thanksgiving and Christmas.

  • 1/2 c
    chopped onion
  • 1/2 c
    chopped celery
  • 1/4 c
    green bell pepper
  • 1/2 c
    sharp cheddar cheese grated
  • 1-2 can(s)
    shoe peg corn
  • 1 can(s)
    cream of celery soup
  • 1/2 pt
    sour cream
  • 1 stick
    butter, melted
  • 1
    sleeve of ritz crackers

How to Make Shoe Peg Corn Casserole


  1. Mix together the first 8 ingredients. Plus add the salt & pepper.
  2. Place mixture in a 9/13 greased casserole dish. I usually spray mine with cooking spray, typically Pam.
  3. Melt butter and mix with Ritz crackers and spread that on top of the casserole.
  4. Bake at 350 degrees for 45 minutes .
