Passover Broccoli Souffle

Ingredients

6eggs, separated at room temperature

2 pkg(10 ounces) frozen chopped broccoli or frozen chopped spinach

1onion
-
1zucchini, coarsely grated

4 Tbspmatzo meal
-
2 Tbspvegetable soup mix
-
1/2 cmayonnaise
-
·salt and pepper to taste
How to Make Passover Broccoli Souffle
- Cook broccoli and drain.
- Put in blender with egg yolks, onion, 2 tbsp. vegetable soup mix and mayonnaise.
Add grated zucchini and matzo meal.
Beat egg whites separately.
Fold into vegetable mixture. - Grease a 9 X 13 inch pan.
Bake at 350 degrees till browned for 1 hour.
